这是因为Spring Boot 默认使用 jackson 来序列化 json。在 Response 对象中，有字段JsonElement body。它是来自 gson 包的对象，而 jackson 不知道如何序列化它。

解决方案：在application.properties文件中以使用 gson 而不是 jackson。请注意，Spring Boot 版本很重要。
