Difference between vcard 2.1 and vcard3.0 is mainly from vcard 2.1 and vcard3.0 profile, from mmi view, we can not see the difference. In version3.0 they have introduced some new fields.
As far as i know following is the list of properties used in version 2.1 and 3.0. According to this in version 3.0 ,they have introduced some new fields and removed some functionalaties (ex: Encoding NOTE field has been removed)
