1. Purpose of the competition

The 2023 Shenzhen Skills Competition - Dapeng New District "Chao Style Flavor" Cooking Professional Skills Competition will be a two-day culinary skill competition from March 6th to March 7th, 2023. The purpose of the competition is to increase the popularity of Chaozhou style dishes , to better motivate skilled Cantonese cuisine masters, advocate skills, study hard, strive for first-class, realistic and dedicated, accelerate the training and selection of a group of "Cantonese cuisine masters" high-skilled talents, and provide high-quality cooking skills for "Dapeng New District" Talent support.

3. Competition items

On March 6, 2023, Shenzhen Skills Competition - Dapeng New District Chaozhou Style Cuisine Professional Skills Competition Preliminary Competition. On-site written test assessment will be conducted at the new landmark of Pengcheng Impression Food. The assessment content will be determined by the expert judges of the organizing committee with reference to the competition standards Written test outline, refine 200 theoretical knowledge points, carry out theoretical knowledge training for contestants, and extract 90 questions to modify into A/B two test papers, and draw papers on site for the preliminary test.

2023年3月7日,深圳技能大赛——大鹏新区潮式风味烹饪职业技能竞赛决赛,在鹏城印象美食新地标进行现场厨艺比拼,组委会组织专家参照竞赛标准命题,每位个人选手需在限定的60分钟内,先使用自带的食材、工具和器皿,通过精加工与调味、成型,实操完成自选菜肴的制作,然后再根据赛场提供的食材和基本调味料,完成指定菜“潮式煎海鱼”的制作。两道菜肴,满分为100分,自选菜分数占比60%,指定菜分数占比40%。

经大赛组委会统计,活动得到社会各界的广泛关注。总报名人数60人,进入决赛50人,参赛选手在选拔赛中考核了“潮式煎海鲈鱼”的刀工和煎锅的基本功,决赛包括潮式风味指定菜肴制作、潮式风味自选菜肴制作。
